These gluten free blueberry muffins get their tender, moist crumb from sour cream and melted butter, and their crunchy top from sugar rubbed with fresh lemon zest. The lemon brightens the berries without turning them into lemon muffins.

The most important step is the 20-minute rest after mixing. Rice-based gluten-free flour blends absorb liquid slowly, and baking the batter right away can leave a gritty, slightly sandy texture. Resting lets the flour hydrate and thickens the batter so the blueberries stay suspended instead of sinking. It also gives you a softer crumb.

Use a flour blend that already contains xanthan gum, and weigh it if you can. Scooped cups vary widely, and too much flour is the most common cause of dry, crumbly muffins.

Tips for success

  • Weigh the gluten-free all-purpose flour blend if possible (280 g). If measuring by volume, spoon the flour into the cup and level it; scooping straight from the bag packs in extra flour and makes the muffins dry.
  • Make sure the blueberries are completely dry before folding them in. Wet berries add extra moisture around each berry, which can leave gummy pockets in the crumb.
  • In a shared kitchen, use new paper liners rather than relying on a pan that also bakes wheat muffins, wash the whisk, spatula and bowls before starting, and use a fresh stick of butter instead of one that may have touched toast or wheat crumbs. Keep wheat flour bags closed and away from your work area, since airborne flour settles on surfaces and open containers.
  • Room-temperature eggs and sour cream blend smoothly with the melted butter. Set them out 30 to 45 minutes ahead, or warm the eggs in a bowl of warm tap water for 5 minutes.

Ingredient substitutions

Gluten-free kitchen notes

Check the label on these ingredients:

  • 2 cups gluten-free all-purpose flour blend: Make sure the flour blend is certified or clearly labeled gluten-free.
  • 2 teaspoons baking powder: Some baking powders use wheat starch. Check that yours is labeled gluten-free.

Avoid cross-contact. Use clean pans, utensils, cutting boards and colanders, and a toaster or oven rack that has not been used for wheat products. Store gluten-free flours separately and wipe down counters before you start.

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 cup unsalted butter (113 g), melted and cooled until just warm
  • 2 large eggs, at room temperature
  • 3/4 cup full-fat sour cream (180 g), at room temperature
  • 1/4 cup whole milk (60 ml)

  • 1 tablespoon finely grated lemon zest, from about 1 large lemon; divided
  • 1 1/2 cups fresh blueberries (225 g), rinsed and patted completely dry

Instructions

Prepare

  1. 1

Line a standard 12-cup muffin pan with paper liners. For the topping, put the 2 tablespoons granulated sugar and 1 teaspoon of the finely grated lemon zest in a small bowl and rub them together with your fingertips for about 30 seconds, until the sugar looks damp and smells strongly of lemon. Set aside.

Make the batter

  1. 2

In a large bowl, whisk together the gluten-free all-purpose flour blend, 3/4 cup granulated sugar, baking powder, baking soda and fine salt for about 30 seconds, until evenly combined with no lumps.

  2. 3

In a medium bowl, whisk the melted unsalted butter, large eggs, full-fat sour cream, whole milk, pure vanilla extract and the remaining 2 teaspoons lemon zest until smooth and no streaks of sour cream remain. If the butter firms into specks, it was too hot when it hit the cold ingredients or the ingredients were too cold; keep whisking and the specks will mostly disappear.

  3. 4

Pour the wet ingredients into the dry ingredients and fold with a rubber spatula until no dry flour is visible. The batter will be thick and slightly loose. Cover the bowl and let it rest at room temperature for 20 minutes; it will thicken noticeably as the flour hydrates.

Bake

  1. 5

While the batter rests, set a rack in the center of the oven and preheat it to 375°F.

  2. 6

Add the fresh blueberries to the rested batter and fold gently in 4 or 5 strokes, just until they are evenly distributed. Overmixing crushes the berries and streaks the batter purple.

  3. 7

Divide the batter evenly among the 12 lined cups, about 1/3 cup each; the cups will be filled nearly to the top. Sprinkle the lemon sugar topping evenly over the muffins, about 1/2 teaspoon each.

  4. 8

Bake for 22 to 25 minutes, rotating the pan halfway through, until the tops are golden, spring back when lightly pressed, and a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs. Berry juice on the toothpick is fine; wet batter means they need 2 to 3 more minutes.

Cool

  1. 9

Cool the muffins in the pan on a wire rack for 10 minutes, then lift them out and cool on the rack for at least 20 minutes more before serving. The gluten-free crumb finishes setting as it cools, and muffins broken open while hot can seem gummy in the center.

Storage

Store cooled muffins in an airtight container lined with a paper towel at room temperature for up to 2 days. Refrigerate for up to 5 days; gluten-free muffins firm up in the fridge, so warm them in the microwave for 10 to 15 seconds before eating. To freeze, wrap each cooled muffin individually and place in a freezer bag for up to 3 months. Thaw at room temperature for about 1 hour, or warm a frozen muffin in a 300°F oven for 10 to 12 minutes. The lemon sugar topping softens slightly during storage.

Frequently asked questions

Why do my gluten-free muffins taste gritty?

Rice-based flour blends need time to absorb liquid, and baking them immediately can leave a sandy texture. The 20-minute rest in this recipe fixes that, and finely ground blends help too.

How do I keep the blueberries from sinking?

Resting the batter thickens it enough to hold the berries in place, so don't skip it. Folding the berries in after the rest, rather than before, also keeps them from settling while the batter sits.

Can I make these muffins dairy-free?

Yes. Replace the butter with melted refined coconut oil, the sour cream with a plain dairy-free yogurt, and the milk with an unsweetened oat milk labeled gluten-free. The crumb will be slightly less rich but still tender.

Can I add nuts or a streusel topping?

You can fold in 1/2 cup chopped pecans labeled gluten-free with the blueberries, but note this adds a tree-nut allergen. For streusel, use gluten-free all-purpose flour blend, brown sugar and cold butter instead of the lemon sugar.

Can I make the batter ahead?

You can refrigerate the mixed batter, without the blueberries, covered for up to 12 hours. Fold in the berries just before scooping, and add 2 to 3 minutes to the bake time since the batter starts cold.

Can I make mini or jumbo muffins instead?

For a 24-cup mini muffin pan, bake at 375°F for 12 to 15 minutes. For 6 jumbo muffins, bake at 375°F for 28 to 32 minutes, using the toothpick test to check doneness.
