Gluten-free flour blends absorb liquid more slowly than wheat flour. If you bake the batter right away, the crumb can taste gritty and the tops stay flat. A 20-minute rest lets the rice and starch flours hydrate, so these gluten free banana muffins bake up soft, with tall domes instead of dense, sunken tops. The bananas need to be heavily spotted, almost black. That ripeness supplies most of the sweetness and moisture. Brown sugar and a spoonful of yogurt keep the crumb tender for days. A hot start at 425°F gives the batter a quick burst of rise before the oven drops to 350°F to finish baking through. Let the muffins cool before you peel the liners. Gluten-free crumb sets as it cools and can seem gummy when hot.

Tips for success

  • Do not skip the 20-minute rest. Gluten-free rice flours need time to absorb liquid. Without the rest, the muffins can taste sandy and spread instead of doming.
  • Weigh the flour if you can. Gluten-free blends vary from about 135 to 150 g per cup, and scooping can pack in too much flour, which makes dry, heavy muffins.
  • Use bananas with skins mostly brown or black. Yellow bananas with only a few spots are less sweet and less moist, which gives a blander, drier muffin.
  • In a shared kitchen, wash the muffin tin, bowls and whisk before starting, since wheat flour can cling to old residue. Use fresh paper liners, and take butter from a new stick rather than a tub that may hold toast crumbs.

Ingredient substitutions

Instead ofUse
unsalted butter1/2 cup neutral oil such as avocado oilThe muffins will be slightly moister and stay soft longer, but they lose the buttery flavor. Combined with dairy-free yogurt, this makes the recipe dairy-free.
plain whole-milk yogurtsour cream or unsweetened dairy-free yogurtSour cream gives a slightly richer, tangier crumb. Dairy-free yogurt works but can make the tops brown a little less.
light brown sugarcoconut sugarUse the same amount. Expect a darker color, a deeper caramel flavor and a slightly less tender crumb.
eggs2 flax eggs (2 tbsp ground flaxseed labeled gluten-free mixed with 6 tbsp water, rested 5 minutes)Flaxseed is often processed alongside wheat, so choose ground flaxseed labeled gluten-free. The muffins will be denser with flatter tops and need 2 to 3 extra minutes at 350°F.

Gluten-free kitchen notes

Check the label on these ingredients:

  • 1 3/4 cups gluten-free all-purpose flour blend: Make sure the flour blend is certified or clearly labeled gluten-free.
  • 1 tsp baking powder: Some baking powders use wheat starch. Check that yours is labeled gluten-free.

Avoid cross-contact. Use clean pans, utensils, cutting boards and colanders, and a toaster or oven rack that has not been used for wheat products. Store gluten-free flours separately and wipe down counters before you start.

Wet ingredients

  • 3 large very ripe bananas (340 g mashed), heavily spotted; about 1 1/2 cups mashed
  • 1/2 cup unsalted butter (113 g), melted and cooled slightly
  • 2/3 cup light brown sugar (135 g), packed
  • 2 large eggs, room temperature
  • 1/4 cup plain whole-milk yogurt (60 g), or sour cream
  • 1 tsp pure vanilla extract

Dry ingredients

  • 1 3/4 cups gluten-free all-purpose flour blend (245 g), rice-based blend that contains xanthan gum; weighing is more accurateCheck GF label
  • 1 tsp baking powder, labeled gluten-freeCheck GF label
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp fine salt

Topping

  • 1 tbsp turbinado sugar (12 g), optional, for a crunchy top

Contains: Milk, Eggs. Check labels on packaged ingredients for other allergens.

Instructions

Make the batter

  1. 1

Line a standard 12-cup muffin tin with paper liners. Place a rack in the center of the oven.

  2. 2

In a large bowl, mash the very ripe bananas with a fork until mostly smooth, with a few small lumps. Measure 1 1/2 cups (340 g). Use extra banana for another purpose, because too much banana makes the centers gummy.

  3. 3

Add the melted unsalted butter, packed light brown sugar, eggs, plain whole-milk yogurt and pure vanilla extract to the bananas. Whisk for about 30 seconds, until smooth and glossy with no streaks of egg.

  4. 4

In a medium bowl, whisk together the gluten-free all-purpose flour blend, baking powder, baking soda, ground cinnamon and fine salt until evenly combined.

  5. 5

Add the dry ingredients to the banana mixture. Fold with a rubber spatula until no dry streaks remain. The batter will be thick. Overmixing is not a gluten concern here, but stop once it is combined.

  6. 6

Cover the bowl and let the batter rest at room temperature for 20 minutes so the flours can hydrate. While it rests, preheat the oven to 425°F. The batter will thicken slightly and look a little puffy.

Bake

  1. 7

Divide the batter evenly among the 12 lined cups, about a heaping 1/3 cup each, filling them nearly to the top. Sprinkle the turbinado sugar evenly over the tops, if using.

  2. 8

Bake at 425°F for 5 minutes. Without opening the oven door, reduce the temperature to 350°F and bake 13 to 16 minutes more. They are done when the tops are deep golden brown and spring back when lightly pressed. A toothpick inserted in the center of a muffin should come out clean or with a few moist crumbs, and the internal temperature should read 200 to 205°F.

  3. 9

Cool the muffins in the tin for 5 minutes, then transfer them to a wire rack. Let them cool at least 15 more minutes before peeling off the liners. The crumb finishes setting as it cools.

Storage

Store cooled muffins in an airtight container lined with a paper towel at room temperature for up to 2 days, or refrigerate for up to 5 days. To freeze, wrap each muffin in plastic wrap and place in a freezer bag for up to 3 months. Thaw at room temperature for about 1 hour, or microwave a refrigerated or thawed muffin for 15 to 20 seconds to soften the crumb.

Frequently asked questions

Why are my gluten-free banana muffins gummy in the middle?

The usual causes are underbaking, too much banana, or eating them hot. Measure exactly 1 1/2 cups of mashed banana, bake until the center reads 200 to 205°F, and let them cool for at least 15 minutes before eating.

Which gluten-free flour blend works best?

Use a rice-based all-purpose or 1-to-1 blend that already contains xanthan gum. If your blend has no binder, whisk 1/2 teaspoon xanthan gum into the dry ingredients. Single flours like almond or coconut flour cannot be swapped in cup for cup.

Can I use frozen bananas?

Yes. Thaw them completely, pour off most of the watery liquid that collects, then mash and measure 1 1/2 cups. Too much of that liquid makes the muffins dense and wet.

Can I add chocolate chips or nuts?

Fold in up to 3/4 cup of chocolate chips labeled gluten-free, or chopped walnuts, after the batter rests. Walnuts add a tree nut allergen.

Can I make the batter ahead of time?

The batter is best baked within an hour of mixing, because the leaveners start working right away and lose strength over time. For make-ahead convenience, bake the muffins and freeze them instead.

How do I get tall muffin tops?

Rest the batter for 20 minutes and fill the cups nearly to the top. Start the bake at 425°F for 5 minutes, then lower the oven to 350°F without opening the door.
